A new offering from El Paraiso that is less of their ‘usual’ style with special fermentations.
This coffee is a honey processed chiroso. Done in a more ‘traditional style’ honey process, this is a beautiful coffee to showcase the quality and care put into the cultivation of the coffees produced at El Paraiso.
Whole cherries are spontaneously fermented underwater for 24 hours before being pulped, followed by a dry fermentation in mucilage for an additional 24 hours. The coffee is then carefully dried with El Paraiso’s custom designed eco-enigma dehumidifier over a period of 4 days.
