El Paraiso Wush Wush Anti-Maceration (100g)
Fans of our offerings will be no stranger to the wild and wonderful coffees from El Paraiso. Diego and his team continue to push the forefront of science and technology in coffee processing. We have been honoured to represent El Paraiso’s fine work over the last few years and we continue to look forward to the wizardry the team has in store.
For the anti-maceration process, cherries were carefully selected for ripeness before being ozonated to reduce the microbial load. It is then transferred into fermentation tanks where a vacuum is used to create a low pressure environment. During this process, the reduced pressure will cause the liquid in cherries to leach out and collect in the tank. As well, the low oxygen environment slows the enzymatic degradation of the polyphenols of the cherry in order to reduce the aromatic loss that results from oxidation. This fermentation is allowed to proceed for 1440 hours resulting in an intense and unique profile.

Inmaculada Signature Sudan Rumé Natural T896 (100g)
Inmaculada is run by the Holguin family, which have been in the agroindustry for nearly 100 years. In 2010 they got involved in the production of coffee and made a key decision to only cultivate exotic varieties such as Geisha, Sudan Rume, Laurina and their famous Eugenoides. In 2015 their Sudan Rume was used to win the 2015 World Barista Championship. Inmaculada is one of the keystone producers of Colombia for competition coffees.
Sudan Rume is a rare variety, even within the specialty coffee space, as it has very low yields. The upside is that it is resistant to coffee rust and provides excellent cup quality as shown by its achievements in competition. This lot underwent anaerobic fermentation before being carefully dried on raised beds over 26 days. Well-controlled drying is key in order to moderate the cup profile and achieve a balance in the intense flavours created from the fermentation.
