Originally a mountaineer, Pepe decided to settle down to be more in touch with the land and fell in love with coffee at Finca Soledad. Pepe worked to replant the land and reintroduce more trees to restore the forest. Finca Soledad now produces mainly sidra and typica mejorada with some smaller lots of geisha.
The term ‘wave’ is based on Pepe’s philosophy where he aims to work in unison with nature to cause the least amount of stress to the coffee's living embryo by gently modulating environment, temperature, and time. This coffee was placed in sealed tanks for an extended (XTD) fermentation period of 12 days before being carefully dried in a dark room for 30-40 days.
