March Roastery Select
This month brought a big weather swing, teasing us with a stretch of spring-like days. To match the unpredictability of the season, we’re sharing something a little different: a unique experimental coffee. It’s not a flashy new processing method, but rather a natural Ethiopian coffee that we’ve rehydrated. Moisture content—and by extension water activity—are unsung factors which influence the quality and expression of green coffee. When we first received this lot, it wasn’t as vibrant as we had hoped or expected. For many roasters, the options might be to take it up with the producer, blend it away, roast it darker, or simply sell it as is. But we like to push beyond the usual. To pair with, we have a more classic washed pacamara from the Santa Lucia farm in Honduras which presents as a lovely clean and sweet Central American coffee.
Santa Lucia Yellow Pacamara Washed
The Mierisch family first started producing coffee in Nicaragua since 1908 and have been involved as head judges in the Cup of Excellence in Honduras since 2011. Their Santa Lucia farm won 1st place Cup Of Excellence Honduras 2019 with a Gesha washed. Their wet mill is located on Santa Lucia with the cupping lab, warehouse and drying patios on Cerro Azul. This is our second year working with the Mierisch family and we continue to be honoured to share their beautiful hard work with you.

“Our Yellow Pacamara seed stock comes from our farms in Nicaragua. We first discovered the Yellow Pacamara, a natural mutation of the Red Pacamara, on our farm Limoncillo around 2004. It is a really low yield varietal, and it is susceptible to all major diseases, nevertheless the amazing cup profile it produces more than makes up for these downsides. We first planted the Yellow Pacamara in Santa Lucia in 2016. This variety is very rare with not many producers growing it, and it has been awarded and used in various barista competitions such as World Barista Championship and Coffee in Good Spirits Championship. In 2021, this variety was blended with Gesha from the same farm and earned 2nd place in Cup of Excellence Honduras.”

Basha Bekele Natural
The return of a producer that we love. We have had several lots from Basha Bekele and they have always impressed us. However, we were a bit surprised when we had our first test roast as it was not quite a vibrant as we remember and expect this coffee to be. Rather than leaving it as is, we decided to implemented a specialised pre-roast rehydration protocol inspired by Christopher Feran’s blog (it’s a lengthy and technical read) on restoring vibrancy to green coffee. If anyone is curious we highly recommend reading the initial article which can be found here.
By targeting a 5% by weight hydration increase prior to roasting, we aim to "reset" the water activity within the seeds. This process allows for more uniform heat transfer and preserves the delicate volatile aromatics that can sometimes diminish during transit. The result is a cup with intensified clarity and a remarkably refreshed acid profile.
