Introducing FIELD NOTE

FIELD NOTE is our roastery tasting series dedicated to origin stories, rare varieties, and processing breakthroughs. In each edition, we open our doors for an intimate cupping focused on a standout producer, farm, region, or terroir, bringing you closer to the hands and science behind every coffee.

Vol 02—Road To Panama, Session 01

Vol 02 opens Road To Panama, a series built around where these farms actually sit. Every bag of Panama carries a farm name, Esmeralda, Elida, Nuguo, and that name does all the work of telling you what is inside, so the area it grew in ends up as small print. Session 01 takes thirteen farms across western Chiriquí and puts fifteen geisha onto one table, grouped by area instead of by farm, so that Boquete, Cerro Punta with Paso Ancho, and Renacimiento can be taste against each other.

ABOUT CHIRIQUI, PANAMA:
Panama's geisha sits in one province, and almost all of it within sight of one volcano. Boquete runs up the east face of Volcán Barú at roughly 1,500 to 1,950 metres, Cerro Punta and Paso Ancho sit on the west face between about 1,660 and 2,130 metres, and Renacimiento carries on further west toward the Costa Rica border, climbing to 2,300 metres at Iris. The same mountain shapes all three, and each side gets its own cloud cover, its own rainfall pattern, and its own picking window, which is why putting them on one table is worth doing. Thirteen farms, one coffee from each with two farms pouring twice, fifteen coffees in one sitting.
